Characteristics of coffee
Good coffee – good flavour, good aroma,
good colour with milk.
Weak coffee – water did not reach boiling
point, insufficient coffee beans, insufficient
steeping time
Flat coffee – coffee kept at wrong
temperature, coffee kept too long, dirty urn.
Bitter coffee – too much coffee used,
infusion time was too long, kept at boiling
point for too long.

In a dry, clean and well covered place
In a well ventilated area
Away from excessive moisture
Away from strong smelling food (e.g. fish,
garlic, onion, etc), as tea and coffee absorb
odorous quickly
